WITH HOMEMADE CRESCENT DOUGH | EGGLESS

Spinach Dip Bites with Eggless Homemade Crescent Dough – Thanksgiving is coming. This is a simple snack or side dish we can add onto the dinner table. I have decided to make an eggless version so that everyone can enjoy this simple dish. You can also get ready made Crescent roll, but of course it’s nothing as good as homemade plus you can’t run away from eggs. Hope you’re inspired with this recipe and give it a try. Enjoy!

Ingredients:

You can make 12 pieces (I don’t have the small cupcake pan) or you can get 24 pieces using the small cupcake pan

 

Crescent Dough:

2 cups bread flour

1 cup plain flour

1 ½ tsp sugar

½ tsp salt

2 ½ tsp instant dry yeast

1 cup of warm milk (add another 1 tbsp if you find your dough too dry)

2 tbsp unsalted butter

 

Fillings:

1 cup frozen spinach, chopped & thawed

1 cup fresh button mushrooms

2 tbsp parmesan cheese, shredded

¾ cup mozzarella cheese, shredded & divided

Pinch of salt

½ tsp garlic powder

½ tsp onion powder

½ tsp cayenne pepper

¾ cup cream cheese

Instructions:

Crescent Dough

1. In a large bowl, add all the dry ingredients and mix well.

2. Add all the wet ingredients. Combine them until it comes together. Use hand to knead the dough for a few minutes (I would say for at least 5 minutes) until the dough becomes smooth and soft.

3. Grease the bowl. Place the dough back into the bowl with a cloth covered. Let it proof for about 1 hour or until size doubled.

4. Prepare the fillings while waiting for the dough to rise.

Fillings

5. Chop the mushrooms and spinach (for spinach, chop and freeze it ahead of time, and thawed when use)

6. In a bowl, add all the ingredients. Mix well until combined.

7. Set aside.

 

​8. After 1 hour, the dough has doubled its size.

9. Knock the air using your knuckle. Transfer the dough onto the pastry board or clean table top.

10. Use a rolling pin to roll the dough flat for maybe about 3mm thick. Roll it to a rectangular shape.

11. Use a cutter to cut the dough in 3x3 inch squares. (If you have a small cupcake pan, cut into 2x2 inch squares)

12. Transfer each squares of flat dough onto the cupcake pan. Press in the dough sheet and make sure you leave some dough out to hold the fillings later.

13. Use a scoop to fill the spinach mixture to fill the dough.

14. Sprinkle some mozzarella cheese on top.

15. Bake at 200°C / 400°F for 20-23 min.

16. The spinach dip bites can be served while it is hot freshly baked from oven.
