WALNUT
BROWNIES

Looking for quick and easy cake recipe, brownies will probably be an option. It's so indulging when you add a scoop of vanilla ice cream on the fresh baked warm brownies, the sensation of cold and hot combination.

In this recipe, I like to add some walnut. The combination of walnut and chocolate is my favorite. This recipe will give you the tips or key of making brownies.

STEP 1: Prepare the ingredients

Chocolate Fudge Walnut Brownies Recipe:

For 8x8inch square baking pan

• 200g dark chocolate, melt half, set aside the other half

• 170 g butter

• 1 tsp instant espresso powder (optional, recommended)

• 1 tbsp dark cocoa powder

• 200g sugar

• 1/2 tsp salt

• 3 eggs

• 1 tsp vanilla extract

• 95g flour

STEP 2: Prepare the batter

Preheat the oven 350°F/180°C.

Put a round parchment paper on the base and around the sides of the baking pan.

Chop the chocolate bar in small chunks. Half is to be melted and save the other half for late.

Melt the chocolate and butter in a large bowl over simmering water. Then add in the espresso coffee, stir and mix well. Remove the bowl from the simmering water. Then add in the sugar. Continue stirring until the sugar is melted. Then let the mixture cool down before the next step.

Add the eggs. Make sure the mixture a little cool down before adding the eggs as you do not want to get the eggs cooked. Then add the vanilla extract and then salt. Stir and mix well.

After adding the salt, sift the flour and cocoa powder into the batter. Stir and they are well combined. Just lightly stir until the flour disappears into the batter. Do not over mix.

When half the flour has disappear into the batter, add the walnut and the balance of chopped chocolate. Again, combine them slowly and do not over mix.

As soon as the ingredients are well combined, pour the batter into the baking pan. Bake for about 30-35 minutes at 350°F/180°C. 

Tips: do not over mix or over stir the batter, otherwise the brownies will become like cake texture. It's supposed to be a little crispy in the outside and soft in the inside.
