SPONGE CAKE

I have tried a few times in making a cotton sponge cake. I only succeed in making one after several attempts. It's definitely one of the hardest baking for me. The problems that I encountered before were: 

1. cake doesn't rise much

2. cake bottom is too wet

3. cake texture is wrong

4. there is holes in the cake

Thus, in this recipe, I had pretty shown step by step, that you will avoid all these problems above. Enjoy baking!

STEP 1: Prepare the ingredients

Cotton Sponge Cake Recipe:

For 18cm round baking pan

5 eggs (medium size)

1/4 teaspoon salt

65 g whole milk

50 g oil 1 tsp vanilla essence

100 g plain flour / all purpose flour

100 g fine sugar

STEP 2: Prepare the batter

Preheat the oven 285°F/140°C.

 

Grease the pan and put a parchment paper on the base. Wrap around the sides of the baking pan with an aluminium foil, and then set it aside. This is to avoid any water or moisture sipping into the cake through the bottom of the pan. (You will find out why later in step 3)

In a large boil, pour the egg yolks in to the bowl. Then add milk, oil and vanilla essence mixture onto the egg yolks. Then sift the flour into the mixture.

Stir the mixture until it is well combined. Continue stirring until the ribbon forms. Set aside while preparing for the egg white.

Use a mixer, beat the egg white on low sped. Gradually increase the speed. Add in the flour little by little. Continue beating until stiff peaks forms.

Fold in the egg white mixture in 3 batches. Fold until it is well combined. Pour the batter into the baking pan very slowly to avoid bubbles trap inside the batter. 

Use a stick or chopsticks to stir the batter in a circular motion. This is to make sure the bubbles do not trap inside. Then give the pan a few tappings.

Prepare a water bath for the pan for baking. (picture shown below)

Bake the cake at 285°F/140°C for about 70-80 minutes. Increase temperature to 

300°F/150°C  for the last 5-10 minutes. 

After the baking, the cake rose very well. Let the cake rest for about 30 minutes or until it is cooled.

After resting for about 30 - 1 hour, the cake will sink a little which is normal.

Dust the cake with some icing sugar.
