Japanese Fluffy Souffle Pancake – This is one of those everybody’s favourite pancakes. You can have it for breakfast, tea time or dessert after your dinner. It’s so soft and fluffy and not too filling, so it’s good to have it as dessert after your meal. It’s very easy, only a quick preparation needed. Ingredients:

25ml (1 ½ tbsp.) whole milk + 1 tsp vinegar

2 egg yolks

1 tsp vanilla extract

1 tbsp vegetable oil

30g (1/4 cup) cake flour

½ tsp baking powder

 

3 egg whites

¼ tsp cream of tartar (or ½ tsp lemon juice)

25g (2 tbsp) fine sugar

Instructions:

  1. Add milk and vinegar. Give it a quick stir and let it rest for few minutes. This will give you buttermilk. If you don’t wish to add vinegar, you can omit.

  2. Separate the eggs.

  3. In a large bowl, add the egg yolks, vanilla extract, milk mixture and oil. Give it a quick mix.

  4. Sift the flour and baking powder. Mix until combine.

  5. In another bowl, add the egg whites and cream of tartar. Mix until bubbly. Add the sugar little by little. Mix until stiff peaks formed.

  6. Gently add the egg whites into the yolk batter in few batches. Gently mix in with a whisk. Mix until combined.

  7. Put on a low heat. Using a flat pan or griddle, lightly grease it. Wipe off if there is excess oil. You may use a piping bag to pipe or use an ice cream scoop or spoon. The purpose is to stack the batter as high as possible or until it’s manageable. Cover with a lid and cook on low heat for about 3 minutes. Flip the other side and cook for about another 3 min.

  8. Drizzle with some honey or maple syrup and top with a small chunk of butter. The soufflé pancake is ready to serve. You may eat it while it’s hot.
