Chocolate Molten Lava Cake – Another easy and quick preparation of a cake. It takes only about 15 min preparation. This is literally my first time making this, and I thought I need to do a trial and error on the timing for a good flow of lava. But it turned out superb with chocolaty flow of lava and the cake remain moist in the outside. It is heavenly. I hope you’re inspired to make this quick and easy dessert. Enjoy!

Ingredients:

I am using 3 ceramic ramekins. You can use anything such as aluminium foil or bowl of any sizes you desire.

 

100g dark compound chocolate

75g (1/3 cup) unsalted butter

1 tsp vanilla extract

¼ tsp salt

2 eggs

80g (1/4 cup + 2 tbsp) fine sugar

20g (2 tbsp) all-purpose flour

 

Small chunk of butter and 2 tsp of flour for greasing and dusting the ramekins

 

Some powdered sugar for dusting the cooked lava cake before serving.

Instructions:

  1. Preheat oven at 200°C/400°F

  2. Grease the ramekins with butter and dust with some flour.

  3. Chop the chocolate bar into small chunks for easy melting, and place them in a heat proof bowl. Add butter. Melt them over a hot boiling water or low heat. Add vanilla and salt into the chocolate mix. Mix until incorporated. Set aside and let cool.

  4. In a large bowl, add 2 eggs and sugar. Mix vigorously until creamy, fluffy and pale. Then add in the chocolate mixture. Mix until well combined.

  5. Sift in the flour. Mix until well combined.

  6. Scoop into 3 prepared ramekins. I am using 3 ceramic ramekins. You can use any other ramekin material such as aluminium foil or bowl.

  7. Divide the batter evenly into the ramekins.

  8. Bake in preheated oven at 200°C/400°F for 8-12 min. Why I said 8-12 min? That is depending on the ramekins you’re using. For ceramic like mine, I baked for 12 min. For aluminium foil or bowl, you may only need about 8-10min or until the surface is cooked.

  9. You may serve on a plate immediately after baking.

  10. Dust with some powdered sugar. Top with a scoop of ice cream or whipped cream, or anything you like.

  11. Cake is ready to serve.
