RED VELVET CUPCAKES
WITH BEETROOTS | CHRISTMAS CUPCAKES

Eggless Red Velvet Cupcakes with Beets – I am a lot more excited about the cake part than the snowman deco. Please excuse me if you think the deco is not on par with similar deco you may have seen. Two different people requested a beetroot cake and red velvet respectively. I thought this such a good timing when I can put both the combo together in one. A red velvet cake without using any artificial food colorings, and the dark red is totally from the beets, how amazing right? Hope you’re inspired to make this cake for the season. Enjoy!

Ingredients:
Beets Puree
Approximately 250g of fresh beetroot
½ cup of water

Red Velvet Cupcakes with Beets
For about 8 cupcakes
You need at least 8 cupcake liners (I got these from IKEA, so adorable!)

100g (1 cup) castor sugar
70g (1/3 cup) cooking oil
50g (1/4 cup) lemon juice
1 ½ tsp vanilla extract
¾ cup freshly pureed beets
130g (1 ¼ cup) cake flour
2 tbsp cocoa powder
1 ½ tsp baking powder
¼ tsp salt
Cream Cheese Frosting
55g (1/2 stick) unsalted butter
112g (1 cup) cream cheese
120g (1 cup) powdered sugar
1 tsp vanilla
Instructions:
How to make Beets Puree​
1. Peel and cut the beets into chunk. Add the beets and water into a medium size pot. Bring it to a simmer for about 12-15min or until they are soft.
2. Transfer the softened beets into a food processor. Pulse few times until they are mashed and became like puree. You will need 3/4 cup of puree. Set it aside.

How to make Red Velvet Cupcakes with beets
3. In large bowl, add sugar, oil, lemon juice and vanilla extract. Mix until well combined. Add the beets puree. Mix until combined.
4. Sift in all the dry ingredients into the beets mixture. Fold in using a spatula. Switch to a mixer to mix for few seconds to prevent lumps.
5. Scoop and fill about 3/4 of the prepared cup liners. Give it few tapping on the table.
6. Bake at preheated oven at for 30-35min.
​How to make the frosting
7. In a large bowl, add the butter. Mix until it's creamy and fluffy. Add the powdered sugar little by little to prevent lumps. Mix until well incorporated.
8. Add the cream cheese. Mix until well combined.
9. Transfer the frosting into a piping bag. Set aside.
10. Cut the strawberries (refer to the video for demonstration)
11. Pipe the frosting into the cupcakes and decorate it with simple snowman using strawberries and mini chocolate chips. (I actually used the smallest chocolate chips available and trimmed them into smaller size and roll them into tiny round balls)
12. Cupcakes are ready to serve.
