HOW TO MAKE A
RAINBOW CAKE

I baked this specially for my son's birthday. Everyone seems to like rainbow a lot, especially the kids, for the fact that it is so colorful, beautiful and very appetizing just by looking at it. So it's a good choice for a kid's birthday cake.

 

It may seem a lot of work to make one, but if you have enough equipment (mixing bowls and baking pans), it will lessen your hassle for doing the washing on and off.

 

By right, you will need 6 mixing bowls and 6 baking pans. I do have 6 pans but I only got 2 mixing bowls, so I need to do some washing so that I can rotate the bowls for other colors.

Cake Ingredients:

650g butter

500g granulated sugar

8 large eggs

650g self raising flour* (sifted)

2 tsp vanilla essence

6 rainbow colorings: red, orange, yellow, green, blue (or aqua), purple

 

*note: you may replace with all-purpose flour, and add 2 tsp of baking soda, 2 tsp of baking powder, and 1 tsp of salt

 

You will need:

6 small bowls

6 small mixing bowls

6 baking pans

cake mixer

spatulas

parchment papers

weighing scale

cake spinner

 

Note: It's totally ok, if you do not have so many bowls and pans. Just do it a color at a time. Of course, it will lengthen your baking process.

 

Buttercream Ingredients:

400g softened unsalted butter or shortening

800g icing sugar (sifted)

5 tbsp whole milk

½ tsp vanilla extract

STEP 1: Bake the Cake

Preheat oven at 170° C.

Add the butter and sugar into the mixer bowl. Mix it for about 10 minutes on medium high speed.

Then add the eggs. Add one at a time. Mix it a few seconds before you add in another egg. Then add the flour. Similarly, add in bit by bit, and mix well. Then add in the vanilla. Mix it for 10 minutes on medium high speed.

STEP 2: Batter Rainbow Colorings

While waiting for the batter, now we make the rainbow colorings. Prepare 6 small bowls. Don’t worry if you do not have 6 mixing bowls and small bowls, you may do each color at a time, and repeat the same for other colors, as mentioned in a, b, and c below

 

a. Add in 2 tbsp of milk into each bowl. Mix each color into each bowl.

Once the batter is ready, weigh the entire batter amount on a weighing scale. And then take an average of 6 of the total weight (simply divide by 6. (shown on left picture). Eg. I weighed my batter as 2010g. Then I divided 2010g with 6 and I got 335g.

Then weigh the average amount of batter (in my case is 335g) on the weighing scale using another mixing bowl. Here I used 2 different types of mixing so that I are not confused what I am weighing. Remember precision in your weighing will give you a nice proportion of cake height in each color.

b. Start with RED. Pour the red color mix into the batter (1 out of 6). Then give it a good mix.

c. Grease the pan and put a parchment paper on the base. Then pour the red color batter into the cake pan. Give it a few tapping to release the bubbles.

Repeat a, b and c for the other 5 colors.

STEP 3: Time for Baking

Once all the colors have been completed, your 6 pans will look like this (above picture). Now time to send them for baking.

Cover with a wet cloth and then proof for another 30 minutes.. The size doubles after 30 minutes (as shown in the right picture). The dough is ready for baking.

STEP 4: Bake

Preheat oven at 170 degree C or 335 degree F. Bake for 30 minutes.
