Chocolate Layer Pudding Cake | No Oven No Eggs No Gelatins – This cake is super easy to me. The cake layer is optional if you wish a full pudding layers. In this recipe, there is no eggs for the cake and puddings. There is also no gelatins for the pudding as I’m using agar agar instead. The texture is lightly firmer than gelatins but it’s still creamy and soft. After chilling for couple of hours, the cake is refreshing and light. What you think about this cake? Ingredients:

  • Eggless Chocolate Cake

I used 7x7x3 inch cake pan with a loose base

 

36g [2½ tbsp] milk

15g [1 tbsp] white vinegar

80g [â…“ cup] fine sugar

40g [3 tbsp] oil

60g [¼ cup] plain yogurt

1 tsp vanilla extract

¼ tsp salt

90g [¾ cup] cake flour

30g [¼ cup] cocoa powder

1 tsp baking powder

½ tsp baking soda

70g [â…“ cup] hot water

 

  • Dark Chocolate Pudding

250g [1 cup] heavy cream

250g [1 cup] whole milk

50g [¼ cup] sugar

40g [2 tbsp] condensed milk

5g [2½ tsp] agar agar powder

40g [¼ cup] dark chocolate chip

40g [¼ cup] white chocolate chip

 

  • White Chocolate Pudding

250g [1 cup] heavy cream

250g [1 cup] whole milk

50g [¼ cup] sugar

40g [2 tbsp] condensed milk

5g [2½ tsp] agar agar powder

80g [½ cup] white chocolate chip

Instructions:

  • Eggless Chocolate Cake

  1. In a cup, add milk and vinegar, mix until well combined. Let it rest for 5 minutes before use.

  2. In a large mixing bowl, add in sugar, oil, yogurt, milk mixture, vanilla extract and salt. Mix vigorously until well combined.

  3. Sift in the dry ingredients: flour, cocoa powder, baking powder and baking soda. Mix until combined, do not over mix.

  4. Add in the hot water. Slowly mix until combined.

  5. Transfer the batter into the prepared loose pan 7x7x3 inch, lined with parchment paper.

  6. Steam in a pot with pot cover wrapped with tea towel to absorb moisture. Steam for about 30 minutes or until the inserted skewer comes out clean.

  7. Let the cake cool. Remove cake from the pan and remove the parchment paper. Trim the cake to level the surface if necessary. Place the cake sheet back into the baking pan.

 

  • Dark Chocolate Pudding

  1. In a milk pot, add in the heavy cream, milk, sugar, condensed milk, agar agar powder. Give it a quick stir. Then add in the both the chocolates.

  2. Cook the mixture on medium heat. Constantly stir while cooking and make sure all the chocolates are melted.

  3. Bring the mixture to a boil. Off the heat.

  4. Strain the mixture.

  5. Let it cool but not completely, it has to be still warm. Once it’s completely cooled and left too long, the mixture will become very thick, hard to pour. The colder the mixture, the harder to pour.

  6. While cooling down, prepare the white chocolate pudding.

 

  • White Chocolate Pudding

  1. In a milk pot, add in the heavy cream, milk, sugar, condensed milk, agar agar powder. Give it a quick stir. Then add in the white chocolates.

  2. Cook the mixture on medium heat. Constantly stir while cooking and make sure all the chocolates are melted.

  3. Bring the mixture to a boil. Off the heat.

  4. Strain the mixture.
