Eggless Tiramisu Cake from Scratch – I hope the eggless fans will love this. It’s absolutely done from scratch. Yes, the lady finger cake as well. I understand eggless lady fingers is usually not available at the store, so why not homemade them. They are easy to make. The cake turned out so moist and fluffy, and what more, they are made without eggs. If you like some alcohol, add into the coffee syrup. Both ways taste amazing. Ingredients:

  • EGGLESS LADY FINGER CAKE

I used 6x6 inch ring

93g [â…“ cup + 1 tbsp] unsalted butter

280g [2â…“ cup] cake flour

4g [1 tsp] baking powder

1g [¼ tsp] baking soda

150g [¾ cup] caster sugar

120g [½ cup] plain yogurt

1 tsp vanilla extract

¼ tsp salt

120g [½ cup] whole milk

 

powdered sugar for dusting

 

 

  • COFFEE SYRUP

60g [¼ cup] hot water

2 tsp instant coffee

15g [1 tbsp] sugar

 

  • TIRAMISU CREAM

226g [1 cup] mascarpone cheese

40g [â…“ cup] powdered sugar

300g [1¼ cup] whipping cream

 

Cocoa powder for dusting

Instructions:

  •  EGGLESS LADY FINGER CAKE

1.     Preheat oven at 175°C/345°F.

2.     In a mixing bowl, add in the butter. Set aside until softened.

3.     Sift the dry ingredients: cake flour, baking powder and baking soda. Give them a quick mix. Set  aside.

4.     In the bowl of softened butter, add sugar. Mix on high speed until creamy and fluffy for at least 1 minute.

5.     Add in yogurt, vanilla extract and salt. Mix until combined.

6.     Add in the sifted dry ingredients in a few batches, alternate with the milk. Mix just until combined. Do not over mix.

7.     Transfer the batter into a piping bag. Pipe diagonal strips to give space for 2 6x6 inch size. Repeat for a smaller tray.

8.     Bake in preheated oven at 175°C/345°F for 15 minutes.

9.     Set aside for cooling.

10.   Use the 6x6 inch ring cutter to cut out 3 sheets. Set aside.

 

  •  COFFEE SYRUP

1.     In a glass, add in the hot water, instant coffee and sugar.

2.     Mix until all dissolved. Set aside for cooling.

 

  •  TIRAMISU CREAM

1.     In a mixing bowl, add in mascarpone cheese and sift the powdered sugar. Mix until well combined.

2.     Add in the whipping cream in a few batches. Mix on medium speed until stiff.

 

  • ASSEMBLE THE CAKE (refer to the video)
