Eggless Chocolate Molten Lava Cake | No Oven – Another amazing eggless recipe. I don’t see much difference compared to the one with egg I did last week. In terms of taste, I really can’t tell. Ingredients are more or less the same, except the eggless will need a little more flour to hold the cake. It’s super easy and it taste so good especially if you add a scoop of ice cream. Ingredients:

You can use anything such as aluminium foil or bowl of any sizes you desire.

 

I am using 3 ceramic ramekins

100g chocolate

55g (¼ cup) unsalted butter

60g (½ cup) all-purpose flour 

25g (¼ cup) cocoa powder 

½ tsp baking powder

100g (½ cup) fine sugar

â…” cup milk 160ml

 

1 cup of salt for the baking in pot. This is to stabilize an even the heat and temperature in the pot.

Small chunk of butter and 2 tsp of flour for greasing and dusting the ramekins

Some cocoa powder for dusting the cooked lava cake before serving.

Instructions:

  1. Grease 3 ramekins with butter and flour them. 

  2. Chop chocolate and cut butter into chunks for easy melting. Melt them over a boiling water in low heat.

  3. In a large bowl, sift all the dry ingredients. Add sugar and give it a quick mix. 

  4. Add milk in few batches. Mix until incorporated.

  5. Add in the chocolate mix. Mix until incorporated.

  6. Add in the remaining milk. Give it a mix until well incorporated.

  7. Divide the batter evenly in 3 or 4 ramekins depending on the size of your ramekins.

  8. This time I am not using the oven. Simply use a large pot that able to put in a round metal plate support. Add 1 cup of salt to stabilize an even the heat and temperature in the pot. You can do without if you have an aluminium pot. On top of the metal plate support, put an aluminium or metal tray to support the ramekins.

  9. Cook the cake for about 8-12min. Why I said 8-12 min? That is depending on the ramekins you’re using. For ceramic like mine, I baked for 12 min. For aluminium foil or bowl, you may only need about 8-10min or until the surface is cooked.

  10. You may serve on a plate immediately after baking.

  11. Dust with some cocoa powder on top. Top with a scoop of ice cream or whipped cream, or anything you desire.
